The Perfect Place

The perfect place for me would be a Candy land and every thing would be made out of candy. My perfect place is like Bianca’s. Beds would be made out out of cotton candy and the clouds. The trees would be giant lollipops in all colors and flavors. Houses would be made out of gingerbread that would be decorated with many many candies. Rivers would be made out of  chocolate and mud would be chocolate pudding. Bears would be gummy bears same with worms and bunnies. I would love to live in Candy land.

Cupcakes

Here is another one of my favorite cupcake recipes. Chocolate cupcakes are the BEST, in my opinion. Yum!

Salted Dark Chocolate Cupcakes

  • 1/2 cup (1 stick) butter, softened
  • 1 1/2 cups granulated sugar
  • 2 eggs
  • 2 tsp. vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 cup dark chocolate cocoa powder (or any unsweetened cocoa powder)
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 cup buttermilk
  • 1/2 cup coffee, lukewarm (you can use decaf coffee if desired
  • chocolate ganache frosting
  • coarse sea salt, for sprinkling

In the bowl of stand mixer, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Add in vanilla.

In a separate bowl, whisk together the flour, cocoa, baking soda and salt until combined. Then in an additional separate bowl, stir together buttermilk and coffee. Add dry ingredients to creamed butter mixture alternately with buttermilk and coffee, beating well after each addition.
Fill paper-lined baking cups two-thirds full. Bake at 375° for 15-20 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.

Baking

I love to bake it is one of my favorite things to do. When I grow up I want to own a bakery with my friends Bianca and Sierra. Here is a dark chocolate cupcake recipe. I like to frost them with blue frosting img_1981 (1)

  • 1/2 cup 1 stick  unsalted butter
  • 2 ounces semi-sweet baking chocolate
  • 1/2 cup unsweetened cocoa powder (not Dutch processed)
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs, at room temperature
  • 1/2 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk*

Directions:

For the cupcakes: Preheat the oven to 350F degrees. Line a 12-cup cupcake/muffin pan with cupcake liners. Set aside.

Melt the butter and chocolate together in the microwave. Microwave in 30 second increments, stirring between each time. You may also melt the butter and chocolate over low heat on the stovetop. Stir until smooth and set aside to slightly cool.

In a medium sized bowl, toss the cocoa powder, flour, baking soda, baking powder, and salt together until thoroughly combined. Set aside. In a large bowl, whisk the eggs, sugar, brown sugar, and vanilla together until smooth. Add the cooled butter/chocolate and whisk until smooth. Add half of the flour mixture, then half of the buttermilk. Repeat until everything is added. Stir until *just* combined; do not overmix. The batter will be very thick like pudding.

Divide the batter between 12 liners in your cupcake pan. Bake for 18 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool completely before frosting.

Soccer

My favorite sport is soccer. I have only played for one year but it is still my favorite sport. My favorite positions are goalie and mid field. My soccer ball is blue and green. My team name was Blue Crush. I played with 4th grade because the 3rd grade teams were full. What is your favorite sport?blue soccer ball

My New Year’s Resolutions

Do you now what a new years resolutions is a new years resolution is something that you want to achieve for the new year like a goal. My  new years resolutions are to

1. to read at least 90 minutes a day.

2. to be better at art.

3.eat more vegetables.

4.to be a better baker.

5. to help my mom clean the house.

6. to be a better friend.

7. to do better in math.

8. to care about others and not my self.

9. to not fight with my brother.
